Head cheese is indeed pale without some thin strips of pig ear to add a little cartilage crunch to your sandwich. I had a Laotian friend years ago who made nam sausages (uncooked but fermented pork) whch we dubbed "pig ear surprises' because in addition to thin strips of crunchy pig ear there was a tiny, but hideously hot, chili concealed in each sausage.
